Split Pea Soup (THM-E)

Ingredients:
1 pound Dry Split Peas
6 cups Chicken Broth, fat-free
3 medium Carrots, peeled and chopped
1 onion, chopped
3 ribs Celery, chopped
2 pounds Meat (the leaner the better)
1 tbsp Garlic, minced
1 (10 oz) can Diced Tomatoes
2 tsp Parsley
2 tsp Thyme
Season to taste – Tony Chachere’s Creole Seasoning
Instructions:
1. Sauté onion, celery, and garlic, until translucent.
2. Add in meat. let cook for three to five minutes.
3. Add in diced tomatoes, herbs, seasoning, chicken broth, and split peas.
4. Cook until tender.
