Keto Cinnamon Roll Donut/Cake
Ingredients:
Batter:
1 ½ cups Almond Flour
6 tbsp Brown Sugar Sweetener
2 tbsp Vanilla Protein Powder
1 ½ tsp Baking Powder
1 ½ tsp Ground Cinnamon, heaping
1 ½ tsp Fresh Ground Nutmeg
¼ tsp Salt
2 Eggs, lightly beaten
3 tbsp Butter, melted
¼ cup Almond Milk, unsweetened
¼ tsp Vanilla Extract
Glaze:
3 tbsp Butter, melted
1 tbsp Sweetener
2 oz. Cream Cheese, softened
½ tsp Vanilla Extract
Instructions:
Donuts/Cakes:
1. Preheat the oven to 325F° and grease 8 wells of a donut pan.
2. In a large bowl, whisk together the almond flour, sweetener, protein powder, baking powder, cinnamon, nutmeg, and salt.
3. Stir in the eggs, melted butter, almond milk, and vanilla extract until well combined.
4. Fill the donut pan wells approximately 2/3 full and bake 15 to 18 minutes, or until the Donuts are lightly browned and set.
5. Let cool in the pan 5 minutes, then flip out onto a wire rack to cool completely.
6. Repeat with any remaining batter.
Glaze:
1. Melt the butter and soften cream cheese in the microwave for 30 seconds.
2. Place sweetener into the bowl of butter and cream cheese. Slowly whisk until well combined.
3. Stir in vanilla extract. Whisk well.
4. Spread glaze on cool Donuts and let sit, about 20 minutes.
Approximately 3 Net carbs for each donut.
