Queso Taco Soup (THM-E)
2 TBS Olive Oil
1 large onion
2 Stalks Celery
1 Green Bell Pepper (4 bumps on bottom = sweet)
2 TBS Minced Garlic
1 Can (15 oz.) Sweet Corn (drained)
1 Can (10 oz.) Rotel Tomatoes
1 Can Diced Tomatoes
1 Can (14.5 oz.) Black Beans (I drain and rinse mine)
2 Lbs Ground Meat
2 TBS Taco Seasoning
Salt and Pepper to taste
8 oz Queso Cheese
1 Cup Heavy Cream
4 Chicken Bouillon Cubes
2 Beef Bouillon Cubes
4-6 Cups hot water
Steps
Saute Onion, Bell Pepper, Celery, and Garlic. Add Ground Meat. And seasoning
Dissolve Bouillon in hot water add in. Add canned ingredients. Bring to a low boil.
Cut cheese into cubes add to boiling mixture and add heavy cream.
Reduce heat and simmer to allow flavors to marry. Garnish with shredded cheese and low carb tortilla chips and a dollop of sour cream. Enjoyn
